There is another new place to try in Sarpy County.
CRISP & GREEN recently opened its newest Omaha area location in Papillion, Nebraska, bringing its menu of salads, grain bowls, wraps, sandwiches, smoothies, and other fresh options to one of the fastest growing parts of the Omaha metro.
Located at 304 Olson Drive in Papillion, the new restaurant opened this summer and is the third CRISP & GREEN location in the greater Omaha area.
But there is a little more to this business than grabbing a salad for lunch.
CRISP & GREEN was built around the idea of connecting food, fitness, and community. Along with its menu, the company regularly hosts fitness classes and wellness events designed to bring people together.
So for this edition of Discover Omaha, we are taking a look inside one of the newest restaurants in Papillion and another addition to the growing Sarpy County business community.
What Is CRISP & GREEN?
CRISP & GREEN is a fast casual restaurant centered around fresh, customizable meals.
The company was founded in Minnesota in 2016 with the idea that eating nutritious food on the go should be easier and actually taste good.
Its menu includes signature salads, grain bowls, wraps, protein focused sandwiches, smoothies, and build your own options.
The Papillion restaurant is the company's third location in the Omaha metro.
CRISP & GREEN first came to Nebraska with its location near 80th and Dodge Streets in Omaha. A second Omaha restaurant opened at 169th and West Center Road in spring 2026.
Then, in July 2026, the company expanded south into Sarpy County with its new Papillion location.
What Is on the Menu?
If you are someone who wants a quick lunch but does not necessarily want traditional fast food, this is probably where CRISP & GREEN will appeal to you.
The menu revolves around meals that can be customized based on what you like.
There are salads and grain bowls with vegetables, proteins, grains, greens, dressings, and toppings, along with wraps and sandwiches for people who want something a little more substantial.
You can choose one of the restaurant's signature combinations or build your own.
There are also smoothies with options for whey or plant based protein.
That makes it an easy option for lunch after a workout, a quick dinner on a busy weeknight, or one of those days when you want takeout but also want something fresh.
More Than a Restaurant
One of the more interesting things about CRISP & GREEN is that the company does not describe itself as simply a restaurant.
Wellness and community are intentionally part of the business model.
Locations around the country regularly partner with local fitness instructors and wellness businesses to offer community workouts, yoga, Pilates, run clubs, and other events.
When the Papillion location celebrated its grand opening this summer, it hosted a free outdoor Pilates class followed by food sampling and other wellness activities.
The Omaha locations have continued hosting fitness events as well.
For example, the West Omaha location has a community yoga event scheduled for September 20, 2026.
It is an interesting concept, especially as more restaurants and businesses look for ways to become places where people actually gather rather than simply places where they make a purchase.
Why Papillion?
The new location is another example of something we have been watching throughout Sarpy County.
Businesses are following the rooftops.
Papillion and the surrounding communities continue to add new housing, apartments, retail, restaurants, services, and commercial development.
CRISP & GREEN specifically cited the response to its existing Omaha restaurants and continued growth in the area as reasons for expanding into Papillion.
The Papillion location is operated by franchisee Brent Bunz and Rontu Inc., which also operates the company's Dodge Street and West Omaha locations.
The group has indicated that it plans to continue expanding CRISP & GREEN throughout Nebraska into 2027.
So Papillion may not be the last new Omaha metro location we see.
Where Is the New Papillion CRISP & GREEN?
The restaurant is located at:
304 Olson Drive, Suite 111
Papillion, Nebraska 68046
It is near Shadow Lake Towne Center and the Highway 370 retail area, putting it in the middle of one of Papillion's busiest shopping and dining areas.
The Papillion location is currently open daily from 8 a.m. to 9 p.m.
That means it can work for everything from a morning smoothie to lunch, dinner, or takeout.
What Does It Cost?
CRISP & GREEN falls into the fast casual price range rather than traditional fast food.
Pricing varies depending on what you order and what you add to your meal, particularly when customizing bowls, salads, smoothies, or proteins.
The restaurant also offers online ordering and catering, which could make it an option for offices, team lunches, meetings, or events in the Papillion and Sarpy County area.
For the most current menu and pricing, it is best to check directly with the Papillion location before ordering.
Another Sign of Growth in Papillion
A new restaurant opening might seem like a small thing.
But when you look at the bigger picture, openings like this tell us something about what is happening in Sarpy County.
Papillion continues to attract residential development, apartments, restaurants, retailers, service businesses, and major employers.
Elsewhere in Papillion, the Tower District continues developing near downtown. Scooter's Coffee recently broke ground on a new $40 million distribution facility that is expected to open in 2027. Midwest Laboratories is also developing a major new laboratory campus in Papillion.
And those are only a few examples.
For people who have lived in Sarpy County for decades, the amount of change can feel dramatic.
For people considering moving to Papillion or relocating to the Omaha metro, it means there are increasingly more restaurants, shopping options, employers, services, recreation, and entertainment close to home.
Living in Papillion, Nebraska
Papillion has become one of the most popular communities for homebuyers searching in the Omaha metro.
Part of its appeal is its location.
Residents can live in Sarpy County while still having relatively easy access to Omaha, Offutt Air Force Base, Bellevue, La Vista, Gretna, and other parts of the metro.
Papillion also offers a mix of established neighborhoods and newer housing developments, along with parks, trails, schools, shopping, restaurants, and community events.
And as the population grows, businesses continue to follow.
That relationship between residential growth and commercial development is one of the reasons we pay attention to new businesses like CRISP & GREEN.
They are small pieces of a much bigger story about how Papillion and Sarpy County are changing.
